I'm a big fan of pancakes and the recent trend in the dessert world seems to be creating pancake "cakes". I love breakfast for dinner and the concept of breakfast for dessert, well ... count me in! This Blueberry Thousand Layer Cake from Sweet Paul magazine caught my eye and I decided to share it today since National Blueberry Month is almost to a close.
I love the mint garnish and would add whipped cream or cream cheese frosting between the layers of pancake, in addition to the blueberry jam.
