I'm a huge fan of polenta and this recipe for Vegetarian Polenta Lasagne Stacksfrom Bev Cooks immediately caught my eye. It's a perfect dish for using the end-of-summer zucchini and a great alternative to traditional lasagne. And, a lot less labor intensive! I tend to buy polenta in logs and am always trying to think of new recipes to incorporate it in. I love the individual serving presentation of this dish ... it's very pretty on the plate. I'll be making this for Labor Day!

Having a German Shepard and a Jack Russell requires a commitment to making sure they get enough exercise. This has been a challenge for me since I have Lupus and am not able to walk them daily due to my physical limitations. Because of this, I am always looking for new ways to exercise them in our small backyard.
When Lily was a puppy, her trainer, Anthony Gio Giammarco from K9 Bar Academy, introduced her to agility training using the tunnel. I love how it not only exercises the body, but provides great stimulation for the dog's mind. I just ordered a tunnel from Amazon.com and will be adding the additional equipment as Indigo & Lily progress. And, I'll also be calling Anthony for some lessons - he's amazing! Hope to have some great pics and feedback to share with you in the future.
I had the privilege of meeting Judy Zeidler a few years ago and was immediately inspired by her enthusiasm for cooking and her love of food. Since the Jewish holidays are coming up next week, I am sharing Judy's Apple Meringue Tart, which is a perfect dessert for this important celebration.
Judy is an accomplished and well-known author of several cookbooks and has her own syndicated television show, Judy's Kitchen. Her articles and recipes for the Jewish holidays are published yearly in the Los Angeles Times and Jewish Journal and she won a Los Angeles Times Best Recipe Award for her Potato Latke recipe.
Thank you for inspiring me Judy! Click here for this recipe.

I was a huge fan of Dr. Seuss as a child and still am. He was a great teacher for children and as an adult I still am inspired when I see one of his quotes. Wisdom to follow throughout the years! What direction will you choose to steer yourself this week?
I spotted this recipe for Parmesan & Herb Quinoa Stuffed Portobello Mushrooms from Tim Vidra and thought it was a fantastic and creative idea. A must share! Love the flavor combinations of this dish and am a big fan of the presentation. I've shared my quinoa cakes with you in previous posts and this presentation is similar ... very appealing on the plate!
I love food illustrations and would hang them all over my kitchen walls if I had the wall space. For now, I'll have to settle for my Pinterest board. I came across this wonderful watercolorist, Marta Spendowska, when searching for new food illustrators. I love her use of color and the fluidity of her painting. Such a talent! She paints many other subject matters as well and her website gallery is fantastic. Her work is also for sale on Etsy and her website. Drop by and pay her a visit when you have a chance ... you'll be glad you did!
