We recently got a new grill and I've been using it every chance I get. I made this recipe for Grilled Eggplant Stacks with Tomato, Feta & Basil the other night and it was outstanding. The grilled smokey flavor of the eggplant really made the dish. It was a healthy version of eggplant parmesan. Loved it!

I've always been inspired by vintage magazine cover art and I often reference them when putting together a new color palette for design projects. Here are a few that inspired me with their use of yellow. Love this bright, cheery color!
Our 1 year old Jack Russell, Lily, loves sleeping with her stuffed animal. She snuggles in the cutest positions and I can't help but grab the camera. Shhhh.....

I'm a huge fan of lighter desserts and this recipe for Super-Light Berry Meringue Cakes from Top With Cinnamon is right up my alley. I don't care for cakes with heavy frostings like buttercream. I love that these are individual cakes and how versatile they are in terms of creating your own version with different toppings and flavorings. And, they are so pretty!

Warm thoughts and a good reminder to start the week on the right foot. A smile goes a long way. I recently started making a conscious effort to smile when I'm talking on the phone (not the entire time). I believe this is reflected in the tone of my voice and have noticed the conversations more light hearted and with laughter.

I have been making this Baked Shrimp with Tomatoes and Feta recipe for years and it's one of my all-time favorites. Friends and family ask me to make it when we are having group dinners and it's always a crowd pleaser. The recipe is from Ellie Krieger of Food Network and was featured on her Healthy Appetite show.
I've served it over quinoa as a main course and I've also served it as an appetizer in little cups on it's own. It would be great served over any grain or pasta. The dill makes this dish incredibly aromatic. And, you won't believe how quick and easy it is to make!
I chose to feature Geoffrey Johnson on this week's Artist Spotlight because I love the softness of his colors contrasted by the charcoal shadowy figures. The city scenes remind me of New York. Geoffrey is an East Coast artist who trained at the Pennsylvania Academy of Fine Arts.

I have always loved children's book illustrations, especially of dogs. I still have several of my favorite children's books on my bookshelf and I look through them periodically and smile. They take me to a happy place! Here are a few that I came across recently that I felt needed sharing.
